GABA(γ-Aminobutyric acid) is a kind of natural amino acid, which is the chief inhibitory neurotransmitter in the mammalian central nervous system. This γ-aminobutyric acid (GABA) is transformed from sodium L-glutamic acid as raw material by fermentation of Lactobacillus (Lactobacillus hilgardii) with the following processing steps, such as pasteurization, cooling, activated carbon filtration, spray drying steps, desalination by ion-exchange, vacuum evaporation, crystallization. This crystal of γ-aminobutyric acid is white or pale yellow powder or granules. This product is made according to the processing techniques of new food material. It can be used in beverages, cocoa products, chocolate and chocolate products, candies, baked goods, snack, but not in infant foods.
